Here’s the deal. I love ice cream. I really love it and eat it all year long. I’ve made homemade ice cream before and it’s great, but sometimes store bought is all you need if you purchase the correct brand. In the words of my cooking mentor, Barefoot Contessa, make sure you get “good” ice cream, though.
Okay, let’s get back to this recipe. I wanted to give some background on my love of ice cream, store bought or homemade, because this recipe calls for store bought sherbet. But don’t be dismayed, there is a homemade element to this recipe. We’re gonna make vanilla soda! Yes! You are are going to love this recipe, trust me. You want to know what it tastes like? An orange creamsicle, how’d you guess? :-)
Vanilla Soda Recipe
1 vanilla bean (split)
1 cup of water
1 cup of sugar
4 cups cold seltzer
Place the cup of water, the cup of sugar and split vanilla bean into a medium sauce pan . Cook on medium heat until the sugar dissolves. Let the vanilla syrup cool for 15 minutes and then place in the refrigerator to cool completely for at least an hour . *you can make the syrup ahead and let the vanilla steep in the syrup for one day. The longer you steep the more flavor of the vanilla will come through.*
Place 1/4 cup of syrup in each glass and add 1 cup of seltzer and mix ( make the soda right before you plan to make the float so that the soda remains fizzy).
Look at all of that vanilla bean goodness. Ummmm…
Orange Creamsicle Float
4 mason jars or glasses
Cute Straws (like these)
Place 2- 3 scoops of orange sherbet into each glass or jar. Pour one glass of vanilla cream soda over the sherbet until covered. Serve immediately and enjoy!
