Sweet Potato Pie w/ Chocolate Cookie Crust

Thanksgiving is in two days! I can’t believe it, can y’all? Since I am a woman of my word, I had to make sure I made a sweet potato pie for y’all. I hope you all really like my take on it. With the help of my cousin Mya I was able to pull the pie together. Thanks Mya!  🙂 Happy Thanksgiving and Happy Baking!

 

 

 

Sweet Potato Pie w/ Chocolate Cookie Crust

Ingredients:

2 cups baked sweet potato, mashed

1 stick unsalted butter, softened

2 eggs

1 cup sugar

1 can sweetened condensed milk

1 tablespoon vanilla extract

1 tsp cinnamon

1 tsp nutmeg

tablespoon of flour

2 1/2 cups crushed chocolate cookie wafers * I used Nabisco’s Famous Chocolate Wafers

1 stick melted butter

 

 

Directions:

Pre-heat your oven to 350 degrees.

In a food processor, place the cookie wafers  and pulse until the you get fine cookie crumbs. Remove the crumbs and add to a bowl, then add the melted butter and stir together.  Once combined, press the cookie crumbs into your pie pan and set to the side.

 

In a mixer fitted with a paddle, add the softened butter and sugar and mix until creamed together. Next add the eggs, sweetened condensed milk, vanilla, nutmeg, cinnamon and flour; mix well.  Once the batter is ready fill the pie plate and bake at 350 for 45 minutes or until the pie is set.  Enjoy!
