Sweet Potato Crumble

Don’t you just love when a recipe comes together and you’re not really trying? This is how this sweet potato crumble came to be. After making the my sweet potato galette I  had one sweet potato left and I wanted to use it and not let it go to waste.  I decided to slice up that potato and do a few little crumbles.  I shared the picture on my Instagram page and asked my peeps if they wanted the recipe and they were all like, duh? Of course! What was I thinking? LOL! So here’s the recipe for these simple yet delicious sweet potato crumbles.  I hope they will be a part of your Thanksgiving table this year!

Sweet Potato Crumbles serves 4

 

Ingredients:

 

2 cups of slices sweet potatoes

 

3/4- 1 cup of granulated sugar

 

1/2 cup light brown sugar

 

1 teaspoon cinnamon

 

1/4  teaspoon nutmeg

 

1 teaspoon vanilla extract

 

4 tablespoons melted butter

 

Crumble Topping:

 

1 cup all purpose flour

 

1/2 cup granulated sugar

 

4 tablespoons softened butter

 

Directions:

 

In a small bowl add the flour, sugar. With a fork or with your fingers add the softened butter and mix together until the mixture becomes crumbly.

 

Directions:

 

Pre-heat oven to 350 degrees.

 

In a medium bowl , add the sweet potatoes, white and brown sugars, butter, vanilla extract and spices.  Mix until combined.

 

Place your ramekins on a cookie sheet and fill each ramekin with about 1/2 cup sweet potatoes. Next, generously add the crumb topping to the tops of each sweet potato mixture; adding enough to cover the tops for the sweet potatoes. Bake for 20-30 minutes or until the crumb topping browns. Serve warm with our without whipped cream or vanilla ice cream. Enjoy!

    What a fun idea! I’ve never heard of making a crumble out of sweet potatoes, but it totally makes sense. And it sounds delicious! I’m a sucker for all things cinnamon + nutmeg, so definitely count me in for a ramekin of this one! 🙂

      Hey David! I came up with this idea on a whim and it turned out pretty well. Sometimes these are the best recipes that come from my kitchen! 🙂
