Tis the season to bake all of the cookies and the candy. I love making candy at Christmas, but this year my goal is to up my cookie game. I’m not promising to do a whole 12 days of cookies theme because I don’t have time to do that many cookies. I do however hope to add two more holiday cookie recipes to Jem of the South.
First up, these super easy Snowball Cookies. They are easy to make and put you into the Christmas spirit!
Snowball Cookies via Land O Lakes
*makes approximately 30 cookies
2 cups all purpose flour
2 cups chopped pecans
1/4 cup white sugar
1 cup of unsalted butter, softened
1 teaspoon vanilla extract
Powdered Sugar * for the cookies after they bake
Pre-heat your oven to 325 degrees.
In a mixing bowl add the flour, butter, sugar, vanilla and pecans. Once the ingredients are combined and a dough has formed, with a 1 or 1/2 inch ice cream scoop, scoop out the dough and roll into balls. Place the dough onto an ungreased cookie sheet and bake for 20-25 minutes or until the cookies are a golden brown. Cool completed the roll each cookie into the powered sugar.
