Pumpkin Spice Granola

I’m sure by now you all know how much I love homemade granola. Check out my other granola recipe here and stay tuned for at least one or maybe two granola recipes in my brunch cookbook.


I really love making homemade granola because you get to control the ingredients and you can also have fun coming up with different flavor combinations like this pumpkin spice granola.  Rest assured you are going to want to keep a batch of this granola on  hand throughout the fall and winter months. It’s so good! Try it in your yogurt, as a cereal or a snack and let me know in the comments how you like it!


Pumpkin Spice Granola makes 4-6 cups


2 cups old fashioned oats


1 teaspoon pumpkin spice blend (get the recipe here)


1/2 cup vegetable oil


1/2 cup maple syrup


1 teaspoon pure vanilla extract


3 tablespoons pure pumpkin (canned)


1 cup pumpkin seeds




Pre-Heat your oven to 350 degrees. In a large bowl, add the oats and toss with the pumpkin spice. In a small bowl add the oil, maple syrup, vanilla and pumpkin and whisk well. Pour the liquid mixture into the oats until coated. Then toss in the pumpkin seeds. Next add the oat mixture to a baking sheet. Spread the mixture evenly onto your baking sheet so that the granola can bake evenly. Bake 30-40 minutes or until the granola becomes a nice, toasty golden brown. ** I turn the granola about halfway through to allow for both sides of the granola to toast. Cool, then store in a sealed container. Enjoy!
