Pecan Sandies

I’m excited to share a few recipes this month in honor of National Pecan Month. I’ve partnered with Schermer Pecans, a local pecan company here in GA,  to bring you a few pecan recipes.  First up, one of  my mom’s favorite cookies, pecan sandies. These cookies are so easy to pull together, not too sweet, but full of buttery goodness. I would definitely say they fall in the shortbread cookie family and shortbread cookies are some of my most favorite cookies. Why? Because, butter, of course. LOL!  I hope you try these cookies and check out Schermer Pecans to use in your recipes.

Pecan Sandies   makes 18-20 cookies  recipe adapted from Taste of Home

1 cup softened butter

1/2 cup white sugar

1/2 cup powdered sugar

2 cups all purpose flour

1 tablespoon water

2 teaspoons vanilla extract

1 cup chopped pecans

1/2 cup powdered sugar

Pre-heat your oven to 300 degrees.   In a bowl fitted with a paddle add both the granulated sugar, powdered sugar and softened butter and cream together.  Then add the flour, water and vanilla extract.  Once mixed well, fold in the pecans.

Roll the dough into small bowls using a small ice cream scooper.  Place the cookies on an ungreased cookies sheet and flatten them with our fingers.  Bake for 25-30 minutes or until the cookies are golden brown.

Cool the cookies and dust with powdered sugar. Enjoy!

**I received a lovely gift of pecans from Schermer Pecans to create this recipes. All opinions are my own.

Do you add the powder sugar with the white sugar in the mixer bowl? It’s not clear when reading the directions
