Hey y’all! It’s been a minute since I’ve posted. I’ve had a pretty busy summer and I plan to do a recap of all the great things that have happened for me this year. Back to this recipe. I was on Instagram a few weeks ago and came across a post from Ghirardelli promoting a new caramel chip. I was sold when I saw caramel and when I found them in my favorite grocery store I knew I had to get two bags and get to baking! This was the first recipe I came up with and plan to do at least 2 more. If you love blondies you’re gonna love these blondies! If you’re wondering where I found the chips, they were in Publix. Also, this is not an ad. I just love Ghirardelli chocolate. It’s the only chocolate I use. Happy Baking!
Caramel Pecan Chip Blondies makes 6-8 bars
1 stick of butter, melted
1/2 cup brown sugar
1/3 cup granulated sugar
1 large egg
1 tablespoon vanilla extract
1 cup all-purpose flour
1/4 teaspoon salt
1 cup Ghirardelli Caramel Chips
1/2 cup chopped pecans
Coarse sea salt *optional
Preheat oven to 350 degrees. Using parchment paper line a 8 inch baking pan with a slight overhang so that you can easily remove the blondies when their finished baking.
Mix the melted butter and sugars together until combined. Mix in the egg and vanilla. Add the flour and the salt until combined. Once the batter has come together, mix in the caramel chips and pecans. Spread the batter into the prepared pan and sprinkle with coarse salt (optional).
Bake at 350 for 30 minutes or until a toothpick inserted into the blondies comes out clean. Cool completely then remove from the pan, cut into squares and enjoy!
