Blackberry Cobbler with Lemon Biscuit Topping

Summer is here and you know what that means.  Time to bake with all of the fresh fruit that’s in season.  So many fruits to choose from, it’s hard to decide where to start. I decided to go with one of my favorite berries, blackberries.  I love making cobblers and they are one of the most easy and delicious desserts to pull together during the summer. I added a refreshing touch to the biscuits by adding in some lemon zest.

Blackberry Cobbler with Lemon Biscuit Topping 



Fruit Filling 


3 cups of fresh blackberries


1 bottle of blackberry syrup from Blackberry Patch *you can find the syrup in Publix


Biscuit Topping


2 cups self rising flour


1 cup heavy whipping cream plus one tablespoon if needed


Zest of one lemon


1/3 cup granulated sugar




Pre-heat your oven to 350 degrees.


Make the Fruit Filling
In a cast iron skillet add the berries and the blackberry patch syrup.  Simmer for 5-7 minutes on medium to high heat then turn on low until you make the biscuits.


Make the lemon biscuits
In a bowl add the flour, lemon zest and granulated sugar.  Slowly add the heavy whipping cream until a biscuit dough forms. Roll the dough into a ball, then with a large ice cream scooper scoop out the dough and pat into biscuits and top the fruit filling until the fruit is covered. You will likely have some dough left over so no worries.


Bake for 30-40 minutes or until the biscuits brown.  Serve warm with vanilla ice cream. Enjoy!
