Large Pot
Candy Thermometer (You will need this because the oil has to be at the right temperature for frying)
Mix water, sugar, and yeast in a large bowl and let sit for 10 minutes.
In another bowl, beat the eggs, salt and evaporated milk together. Mix egg mixture to the yeast mixture. In a separate bowl, measure out the bread flour. Add 3 cups of the flour to the yeast mixture and stir to combine. Add the shortening and continue to stir while adding the remaining flour. Remove dough from the bowl, place onto a lightly floured surface and knead until smooth. Spray a large bowl with nonstick spray. Put dough into the bowl and cover with plastic wrap or a towel. Let rise in a warm place for at least 2 hours.
Preheat oil in a deep-fryer to 350 degrees F.
Add the confectioners’ sugar to a paper or plastic bag and set aside.
Roll the dough out to about 1/4-inch thickness and cut into 1-inch squares. Deep-fry, flipping constantly, until they become a golden color. After beignets are fried, drain them for a few seconds on paper towels, and then toss them into the bag of confectioners’ sugar. Hold bag closed and shake to coat evenly.
They look delicious. I could have some now with a cup of coffee. Great project. I might try it.
Yes, Sherry! A cup of coffee would be great with these. Next time, I will have coffee for sure.
These look so yummy! I sure wish I had some for my dessert tonight.
Those look absolutely scrumptious! Well done, Tamara!
Thanks Elizabeth! They were delicious!
Valerie, they sure were good. Too many for me to eat by myself though!
They look great. I’ve made them before, but not homemade. I used the Cafe DuMond Mix. They were really good, but still didn’t compare to the ones at the real Cafe DuMond in New Orleans…of course, it could have just been all the powdered sugar floating around my head that made them so much better in New Orleans
Thanks Michelle! Yes, the beignets at Cafe DuMond are excellent. I haven’t been there in years, but I remember that yummy powdered sugar.
Wow! reminds me of the beignets we had in New Orleans…whew, flashback!
Yes, Alisa. I had a flashback when I made them.
